Super Slatko Report

In this edition of the Super Slatko Report, DJ Moe gives us a list of his most highly recommended Croatian seafood dishes. For all of you wine lovers out there, he also throws in a perfect complimentary glass of vino to go along with your meal. What a treat!

What a lesson we just had. Uncle Mike and Tony D out did themselves again. Slow clap…As always I appreciate you for sticking around for the Super Slatko Report, but maybe today it should be called the Super Savory Report, because today we will talk all about my arbitrary list of the top 10 Croatian Sea Food Dishes.

This list it compiled from many websites, my own online research and personal experience. By no means have I tried every Croatian Sea Food Dish, hence this lists arbitrary nature. This list was simplay a great way to make myself super hungry and start a conversation. I hope I am able to inspire some of you to go out there and try a few or all of these or even try make to these dishes yourself! 1. Crni Rižot (Black Risotto)

Ingredients:

  - Squid or cuttlefish

  - Arborio rice

  - Onion

  - Garlic

  - Tomato paste

  - Squid ink

  - Olive oil

  - White wine

  - Fish broth

  - Parsley

  - Lemon

Tasting Notes: Rich, briny, and creamy with a slight sweetness from the squid ink, and a hint of acidity from the lemon.

Best Drink Pairing: A crisp and mineral-driven white wine such as Malvasia or a light Sauvignon Blanc.

2. Brudet (Fish Stew)

Ingredients:

  - Various fish (sea bass, bream, or monkfish)

  - Tomato

  - Onion

  - Garlic

  - Olive oil

  - Red wine vinegar

  - Parsley

  - Bay leaves

  - Polenta (side)

Tasting Notes: A hearty, rustic stew with a tomato-based broth, a mix of different textures from the fish, and herbaceous undertones.

Best Drink Pairing: A medium-bodied red like Plavac Mali or a dry white such as Pošip.

3. Škampi na Buzaru (Shrimp in Buzara Sauce)

Ingredients:

  - Scampi (langoustines)

  - Garlic

  - Olive oil

  - Tomato paste

  - Breadcrumbs

  - White wine

  - Parsley

  - Lemon

Tasting Notes: Sweet and delicate shrimps are balanced by a savory tomato and garlic sauce, with a touch of brightness from the lemon and wine.

Best Drink Pairing: Dry white wines like Grk or Chardonnay work well with this dish.

4. Hobotnica ispod Peke (Octopus under the Bell)

Ingredients:

  - Octopus

  - Potatoes

  - Onion

  - Carrot

  - Garlic

  - Olive oil

  - White wine

  - Fresh herbs (rosemary, thyme)

  - Salt and pepper

Tasting Notes: The octopus is tender with a smoky, earthy flavor from the cooking method, complemented by sweet, caramelized vegetables. I’ve had this and it was pretty great, I recommend it if you like those fish forward flavors.

Best Drink Pairing: A full-bodied white wine such as Malvazija or a rosé like Plavac Mali Rosé.

5. Salata od Hobotnice (Octopus Salad)

Ingredients:

  - Octopus

  - Red onion

  - Capers

  - Parsley

  - Olive oil

  - Vinegar

  - Lemon

  - Salt and pepper

Tasting Notes: Light, refreshing, and tangy with a balance of the soft octopus and crunchy onions, all lifted by the acidity of lemon and vinegar. This one is actually one of my all time favorites, super tasty, a very nice fresh salad.

Best Drink Pairing: A refreshing rosé like Teran Rosé or a sparkling wine such as Croatian sparkling Malvasia, a light beer is also a nice pairing.

6. Sardele na Žaru (Grilled Sardines)

Ingredients:

  - Fresh sardines

  - Olive oil

  - Garlic

  - Lemon

  - Parsley

  - Sea salt

Tasting Notes: Grilled sardines have a slightly smoky flavor, crispy skin, and a firm yet tender texture, highlighted by the freshness of lemon and garlic.

Best Drink Pairing: A dry, crisp white wine like Pošip or a chilled glass of local beer.

7. Bakalar na Bijelo (Cod in White Sauce)

Ingredients:

  - Dried cod (salted or unsalted)

  - Potatoes

  - Garlic

  - Olive oil

  - Fresh parsley

  - Lemon

  - Salt and pepper

Tasting Notes: Creamy and smooth with a mild fish flavor, accented by garlic and lemon, this dish is both comforting and flavorful.

Best Drink Pairing: A light white wine such as Graševina or a sparkling wine.

8. Brodetto (Adriatic Fish Soup)

Ingredients:

  - White fish (grouper, snapper)

  - Shellfish (mussels, clams)

  - Shrimp

  - Tomato

  - Onion

  - Garlic

  - Olive oil

  - White wine

  - Bay leaves

  - Fresh herbs (parsley, thyme)

  - Lemon

Tasting Notes: A delicate, fragrant soup with the fresh flavors of the sea, brightened by tomatoes, herbs, and wine.

Best Drink Pairing: A dry white wine such as Žlahtina or a light rosé.

9. Kvarnerski Škampi (Kvarner Bay Scampi)

Ingredients:

  - Kvarner Bay scampi (unshelled prawn tails or shrimp)

  - Olive oil

  - Garlic

  - White wine

  - Parsley

  - Lemon

  - Sea salt

Tasting Notes: Sweet, juicy scampi with a subtle garlic flavor, enhanced by the freshness of parsley and lemon.

Best Drink Pairing: A fresh, mineral-driven white wine such as Istrian Malvazija or a light sparkling wine.

10. Lignje na Žaru (Grilled Squid)

Ingredients:

  - Fresh squid

  - Olive oil

  - Garlic

  - Lemon

  - Parsley

  - Sea salt

Tasting Notes: Smoky, tender squid with crispy edges, balanced by the brightness of lemon and garlic, and a touch of bitterness from the grill.

Best Drink Pairing: A medium-bodied white wine like Grk or a crisp, cold beer.

Again, I pulled this info from across a variety of websites and my own experience and I did my best to suggest best parings for drinks. Hopefully they all line up ok.
